Apple-Gingerbread Squares

Ingredients

  • 1/4 cup butter, softened
  • 1/3 cup granulated sugar
  • 3 Tbsp. firmly packed dark brown sugar
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 tsp. crystallized ginger, minced
  • 1 tsp. ground ginger
  • 3/4 tsp. baking soda
  • 1/2 tsp. ground ginger
  • 3/4 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground cloves
  • 1/4 tsp. salt
  • 1/2 cup molasses
  • 1/2 cup boiling apple cider
  • Ginger-Molasses Whipped Cream:
  • 1/2 cup whipping cream
  • 1 1/2 tsp. powdered sugar
  • 1 1/2 molasses
  • 1/8 tsp. ground ginger

Directions

  1. Beat butter at medium speed with a handheld mixer until creamy; gradually add sugar, beating well. Add egg, beating until mixture is blended.

  2. Add flour and next 6 ingredients, beat at medium speed until smooth. Pour into a greased and floured 7 1/2 inch square pan.

  3. Bake at 325 degrees for 35 to 40 minutes or until a wooden pick inserted in center comes out clean. Cool on a wire rack. Cut into squares. Serve with Ginger-Molasses Whipped Cream.

  6. Best all ingredients at high speed with a handheld mixer until soft peaks form.
