Ingredients
- 1/4 cup butter, softened
- 1/3 cup granulated sugar
- 3 Tbsp. firmly packed dark brown sugar
- 1 large egg
- 1 cup all-purpose flour
- 1 tsp. crystallized ginger, minced
- 1 tsp. ground ginger
- 3/4 tsp. baking soda
- 1/2 tsp. ground ginger
- 3/4 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 1/4 tsp. salt
- 1/2 cup molasses
- 1/2 cup boiling apple cider
- Ginger-Molasses Whipped Cream:
- 1/2 cup whipping cream
- 1 1/2 tsp. powdered sugar
- 1 1/2 molasses
- 1/8 tsp. ground ginger
Directions

Beat butter at medium speed with a handheld mixer until creamy; gradually add sugar, beating well. Add egg, beating until mixture is blended.

Add flour and next 6 ingredients, beat at medium speed until smooth. Pour into a greased and floured 7 1/2 inch square pan.

Bake at 325 degrees for 35 to 40 minutes or until a wooden pick inserted in center comes out clean. Cool on a wire rack. Cut into squares. Serve with Ginger-Molasses Whipped Cream.
