Ingredients
- Olive oil spray
- 2- 8 oz. chicken breasts
- 1/2 tsp kosher salt
- Black pepper
- 1 tbsp. olive oil
- 1/2 cup seasoned whole wheat bread crumbs
- 1/4 cup whole wheat bread panko bread crumbs
- 1/4 cup shredded Asiago cheese
- 1/2 tbsp. dried oregano
- Finely chopped fresh parsley, for garnish
- 1 lemon, cut into wedges

Preheat the oven to 425. Spray a nonstick baking sheet with oil.

Halve each chicken breast horizontally to create 2 cutlets. Season both sides with the salt and pepper. Place the chicken cutlets and oil in a shallow bowl and toss to coat.

On a plate, combine the bread crumbs, panko, Asiago, and oregano. Dredge each chicken breast in the bread crumb mixture, then transfer to the prepared baking sheet. Spray the tops of the chicken with oil.

Bake until golden on the outside and they reach 165, about 15 minutes. Divide the chicken among 4 plates and garnish with a sprinkle of chopped parsley. Serve with the lemon wedges.
