Slow Cooker Adobo Chicken with Sriracha, Ginger, and Scallions

Ingredients

  • 1/4 cup soy sauce
  • 3 tbsp. red wine vinegar
  • 1 tbsp. Sriracha
  • 1 tbsp. dark brown sugar
  • 8 garlic cloves, crushed
  • 1 tbsp. grated fresh ginger
  • Black pepper
  • 8 skinless chicken drumsticks
  • 6 bay leaves
  • 1 scallion, chopped, for garnish

Directions

  1. In a medium bowl, combine the soy sauce, vinegar, Sriracha, brown sugar, garlic, ginger, and pepper to taste.

  2. Arrange the chicken in an even layer in the bottom of a slow cook. Add the bay leaves and pour the sauce over the chicken.

  3. Cover and cook on LOW 4-6 hours, until the chicken is cooked through and falling off the bone. Discard the bay leaves. Served garnish with scallions.
