Slow Cooker Indian Chicken and Peas

Ingredients

  • 2 tsp ghee or unsalted butter
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 lb. ground chicken
  • 1 tsp kosher salt
  • 3/4 cup canned tomato sauce
  • 4 tbsp. chopped fresh cilantro
  • 1 fresh jalapeno, seeded and finely chopped
  • 3/4 tsp ground coriander
  • 3/4 tsp ground cumin
  • 3/4 tsp chili powder
  • 3/4 tsp ground turmeric
  • 3/4 tsp garam masala
  • 3/4 tsp ground cinnamon
  • 1 bay leaf
  • 3/4 cup frozen peas

Directions

  1. In a large nonstick skillet, melt the ghee over medium heat. Add the onion and cook, stirring, until golden, 6-8 minutes. Add the garlic and ginger and cook until fragrant, about 2 minutes. Add the ground chicken and salt and cook, breaking the meat up with a wooden spoon as it cooks, 5-6 minutes.

  2. Transfer to a slow cooker and add the tomato sauce, 1/4 cup water, 2 tbsp. of the cilantro, the jalapeno, coriander, cumin, chili powder, turmeric, garam masala, cinnamon, and bay leaf. Stir well.

  3. Cover and cook on LOW 6-8 hours, adding the peas during the last 30 minutes of cooking time. Discard the bay leaf, add the remaining 2 tbsp. cilantro, and serve.
