Spinach and Artichoke Dip Casserole

Serves 6 people
Ingredients
- 4 cups cauliflower
- 1/4 cup butter
- 1/2 cup heavy whipping cream
- 8 oz cream cheese
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/4 nutmeg
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 1 cup frozen spinach
- 1 can artichoke hearts, drained and chopped
- 1-1/2 cup shredded Mozzarella cheese
- 1/4 cup Parmesan
- 2-3 cups chicken, cooked and cut
Directions

Combine cauliflower, butter, whipping cream, cream cheese, salt, pepper, nutmeg, garlic powder, and paprika in a sauce pan and simmer on the stove until cauliflower is fork tender

Add spinach, artichoke hearts, 1 cup Mozzarella, and Parmesan to the sauce pan and stir to combine

Mix in chicken

Spoon the mixture into a greased casserole dish and top with remaining Mozzarella cheese

Bake at 400F for 20 minutes until golden and bubbling
