Zucchini Relish

Lovely with meats or cheese and crackers
Prep time: 30 minutes
Cook time: 15 minutes

Ingredients
- 1 kg zucchini, finely sliced
- 2 medium onions, finely sliced
- 1/4 C salt
- 3/4 C white sugar
- 1 t dry mustard
- 3 C white vinegar
- 1 t each celery seeds, mustard seeds, turmeric
- 1/4 C cornflour, mixed to paste with little extra vinegar
Directions

Place vegetables in glass bowl, cover with water and sprinkle with salt – stand 1 hour.

Drain but do not rinse.

Mix remaining ingredients, except cornflour/vinegar mix.

Bring these to the boil, then pour over vegetables – stand 1 hour.

Bring mixture to boil, simmer gently, covered, for 10 minutes.

Thicken with cornflour paste.

Spoon into hot jars and seal.

PS: can add diced red capsicum to vegetable mix for flavour and colour, when simmering vegetables.
