Ingredients
- 1/4 cup dark mushroom soy sauce
- 3 tbsp. honey
- 1 tsp toasted sesame oil
- 1 tbsp. minced garlic
- 2 tsp grated fresh ginger
- 2 1/4 lbs. boneless pork shoulder, trimmed
- 5 oz. sliced shiitake mushrooms
- 2 medium scallions, sliced, for garnish
Directions

In a small bowl, whisk together the soy sauce, honey, oil, garlic, and ginger. Pour into a large Ziploc bag. Add the pork to the bag and seal. Marinate in the fridge for at least 2 hours, turning occasionally.

Place the pork and marinade in a slow cooker, along with the shiitakes. Cover and cook on LOW 8 hours. Transfer the pork to a cutting board and shred with 2 forks. Serve with the sauce and garnish with the scallions.
