Slow Cooker Asian Pork with Mushrooms

Ingredients

  • 1/4 cup dark mushroom soy sauce
  • 3 tbsp. honey
  • 1 tsp toasted sesame oil
  • 1 tbsp. minced garlic
  • 2 tsp grated fresh ginger
  • 2 1/4 lbs. boneless pork shoulder, trimmed
  • 5 oz. sliced shiitake mushrooms
  • 2 medium scallions, sliced, for garnish

Directions

  1. In a small bowl, whisk together the soy sauce, honey, oil, garlic, and ginger. Pour into a large Ziploc bag. Add the pork to the bag and seal. Marinate in the fridge for at least 2 hours, turning occasionally.

  2. Place the pork and marinade in a slow cooker, along with the shiitakes. Cover and cook on LOW 8 hours. Transfer the pork to a cutting board and shred with 2 forks. Serve with the sauce and garnish with the scallions.
