Greek Panzanella Salad

Ingredients

  • 2 pre-oiled gyro breads
  • Olive oil spray
  • 2 cucumbers, peeled and chopped
  • 1 green bell pepper, chopped
  • 1 1/2 cups halved grape tomatoes
  • 1/4 cup sliced red onion
  • 5 tsp olive oil
  • Juice of 1/2 lemon
  • 1 tbsp. red wine vinegar
  • 2 tsp finely chopped fresh oregano
  • 1/2 tsp kosher salt
  • Black pepper
  • 3 oz. feta cheese, crumbled

Directions

  1. Preheat a grill to medium. Lightly spritz the bread on both sides with oil and grill for about 1 minute per side. Transfer to a cutting board and cut into 1-inch pieces.

  2. In a large bowl, combine the cucumbers, bell pepper, tomatoes, and red onion. Add the olive oil, lemon juice, vinegar, oregano, salt and pepper to taste and toss well. Add the feta and bread and toss. Divide among 4 bowls and serve.
