Ingredients
- Vinaigrette:
- 1 1/2 tbsp. olive oil
- 1 1/2 tbsp. red wine vinegar
- 2 tsp Dijon
- 1/4 tsp kosher salt
- Black pepper
- Salad:
- 5 cups chopped romaine lettuce
- 1/2 cup canned chickpeas, rinsed and drained
- 1/4 small red onion, sliced
- 1 hard-boiled egg, quartered
- 1 medium vine tomato, quartered
- 1/4 cup shredded mozzarella cheese
Directions

For the vinaigrette: In a small bowl, whisk together the oil, vinegar, mustard, salt, and pepper to taste.

For the salad: Arrange the lettuce in a large bowl. Top with the chickpeas and red onion. Arrange the egg, tomato, and mozzarella on top. When ready to serve, toss with the vinaigrette.
