Italian House Salad with Dijon Vinaigrette

Ingredients

  • Vinaigrette:
  • 1 1/2 tbsp. olive oil
  • 1 1/2 tbsp. red wine vinegar
  • 2 tsp Dijon
  • 1/4 tsp kosher salt
  • Black pepper
  • Salad:
  • 5 cups chopped romaine lettuce
  • 1/2 cup canned chickpeas, rinsed and drained
  • 1/4 small red onion, sliced
  • 1 hard-boiled egg, quartered
  • 1 medium vine tomato, quartered
  • 1/4 cup shredded mozzarella cheese

Directions

  1. For the vinaigrette: In a small bowl, whisk together the oil, vinegar, mustard, salt, and pepper to taste.

  2. For the salad: Arrange the lettuce in a large bowl. Top with the chickpeas and red onion. Arrange the egg, tomato, and mozzarella on top. When ready to serve, toss with the vinaigrette.
