Ingredients
- Cooking spray
- 2 acorn squash
- 1 1/2 tbsp. olive oil
- Leaves from 3 sprigs of fresh thyme
- 3/4 tsp kosher salt
- 1/2 tsp garlic powder
- Black pepper
- 2 tbsp. grated Parmesan

Preheat the oven to 425. Lightly coat 2 large nonstick baking sheets with cooking spray.

Halve the squash lengthwise and scoop out the seeds with a spoon. Slice each half crosswise into 1/4-inch-thick half-moons and place them in a large bowl. Add the olive oil, thyme, salt, garlic powder, and pepper to taste and toss to coat. Arrange the squash on the prepared baking sheets.

Bake until golden brown, 20-24 minutes, flipping them halfway through. Remove the pan from the oven, top with the Parmesan, and serve hot.
