Ingredients
- 2 (15 oz.) cans OR 1 (29oz.) can unpeeled apricot halves, thoroughly drained
- 1 egg
- 2/3 cup milk
- 1/2 tsp. vanilla extract
- 1 Tbsp. shortening, melted
- 1 cup all purpose flour
- 2 Tbsp. granulated sugar
- 1 tsp. baking powder
- 1/4 tsp. salt
- Oil for frying
- Confectioners' sugar
Directions

Dry apricot halves on paper towels until as dry as possible.

In a large bowl, beat egg with milk and vanilla, stir in melted shortening.

In a medium bowl, combine flour, granulated sugar, baking powder and salt; add to egg mixture and stir just until mixed.

In a deep skillet, heat about 2 inches of oil to 365 degrees.

Dip apricots in batter. Fry, a few at a time, until fritters are brown, about 4 minutes, turning once. Drain on paper towels. Roll in confectioners’ sugar. Serve warm.
