Apricot Ginger Chicken Breasts

Ingredients
- 2 Tbsp. finely chopped onion
- 1 tsp. olive oil
- 1/4 cup apricot preserves
- 1/4 cup ketchup
- 1 Tbsp. red wine vinegar
- 1/4 tsp. ground ginger
- 4 boneless, skinless chicken breast halves
Directions

For sauce, in a small saucepan cook onion in hot oil until tender. Stir in preserves, ketchup, vinegar and ginger. Bring to a boil; reduce heat. Cover and simmer for 3 minutes. Remove from heat.

Preheat grill to medium. Grill chicken, uncovered for 12 to 15 minutes or until chicken is no longer pink (160 degrees), turning once and brushing with sauce during the last 5 minutes of grilling.

Reheat remaining sauce and pass with chicken.
