Apricot Nectar Souffle

Ingredients

  • 3 eggs, separated
  • 3 Tbsp. butter
  • 1/4 cup all-purpose flour
  • 14 cup sugar
  • 1/4 tsp. salt
  • 1 cup apricot nectar
  • 1 1/2 tsp. lemon juice

Directions

  1. Beat egg whites until stiff; set side.

  2. Melt butter in saucepan; Blend in flour, sugar and salt Add nectar; cook stirring constantly, until thickened and bubbly. Blend in lemon juice; remove from heat.

  3. Beat egg yolks until thick and lemon-colored. Blend in hot mixture. Carefully fold in whites, blending well. Pour into 1 1/2 quart soufflé or casserole dish and set in pan of hot water.

  4. Bake at 325 degrees for 1 hour. Serve at once.
