Ingredients
- 4 cups cooked black-eyed peas
- 1/2 cup diced purple onion
- 1/2 cup chopped green onions
- 1 cup diced fresh tomatoes
- 2 cloves minced fresh garlic
- 1 medium jalapeno. seeded and diced
- 3/4 cup vegetable oil
- 1/4 cup vinegar
- 1/2 tsp. dried basil
- 1/2 tsp. black pepper
- 1/2 tsp. dried oregano
- 1/2 tsp. salt
Directions

Drain and rinse peas; and to large bowl. Add onions, tomatoes garlic and jalapeno. Cover with oil, vinegar and seasonings and mix thoroughly.

Refrigerate immediately and let marinade at least 8 hours. Stir occasionally. Drain marinade and serve chilled.
