Apricot Clafouti (French Custard and Fruit Dessert)

Ingredients
- 1 lb. fresh apricots, sliced 1/4 inch thick
- 1 cup half-and-half or whole milk
- 2 large eggs
- 3 Tbsp. Cognac
- 1/3 cup granulated sugar
- 1/2 cup less 1 Tbsp. all-purpose flour
- Freshly grated nutmeg
- sifted confectioners' sugar, for dusting

Preheat oven to 350 degrees. Butter 1 quart shallow baking or gratin dish and arrange apricots over the bottom.

In a blender or food processor, combine half-and-half, eggs, cognac and sugar. Add flour and blend until smooth. Pour the mixture over apricots.

Grate the nutmeg over the custard and bake in the center of the oven for 30-35 minutes, or until clafouti is golden and puffed. Allow to cool for 5 minutes. Sprinkle heavily with confectioners’ sugar and serve.
