Ingredients
- 1/3 cup sugar
- 2 tsp paprika
- 1 tsp pepper
- 1 tsp curry powder
- 1/2 tsp salt
- 3 1/2-4 lb. pork country-style ribs
- 1 cup packed brown sugar
- 1/2 cup white or cider vinegar
- 1/2 cup chopped onion
- 1/3 cup spicy brown or Dijon mustard
- 2 garlic cloves, minced
- 2 tbsp. honey
- 2 tsp liquid smoke
- 1/4 tsp celery seeds

In a small bowl, combine sugar, paprika, pepper, curry powder, and salt. Sprinkle onto ribs; rub in. Place ribs in a shallow pan. Cover and chill for at least 2 hours or up to 6.

Preheat grill to medium. Place ribs, bone sides down. Cover and grill until tender, turning once.

Meanwhile, for sauce, in a medium saucepan, combine the brown sugar, vinegar, onion, mustard, garlic, honey, liquid smoke, and celery seeds. Bring to boiling; reduce heat. Cook, uncovered, for 25-30 minutes or until slightly thickened, stirring occasionally.

Brush sauce onto ribs occasionally during the last 10-15 minutes of grilling. Reheat any remaining sauce until bubbly; pass with ribs.
