Ingredients
- 8 lamb rib or loin chops
- 1/4 cup stone ground mustard
- 2 green onions, thinly sliced
- 2 tbsp. dry white wine
- 1 tbsp. balsamic vinegar
- 3 garlic cloves, minced
- 1 tsp snipped fresh rosemary
- 1 tsp honey
- 1/2 tsp salt
- 1/2 tsp pepper

Trim fat from chops. In a small bowl, stir together mustard, green onions, wine, vinegar, garlic, rosemary, honey, salt, and pepper. Spread mixture evenly onto both sides of each chop. Place chops on a large plate; cover loosely with plastic wrap. Chill in the fridge for at least 2 hours or up to 3 hours.

Grill chops on the rack on an uncovered grill directly over medium, 12-15 minutes.
