Ingredients
- 2 tbsp. butter
- 1/2 cup chopped onion
- 1/2 cup sliced carrot
- 2 tsp sugar
- 4 tsp flour
- 1 1/2 cups beef broth
- 2 tbsp. tomato paste
- 1/2 tsp dried thyme, crushed
- 1 bay leaf
- 1/8 tsp black pepper

In a medium saucepan, melt butter over medium heat. Add onion and carrot; cook about 5 minutes or until tender. Stir in sugar. Cook and stir for 5 minutes. Stir in flour. Cook and stir for 2 minutes.

Add beef broth, tomato paste, dried thyme, bay leaf, and black pepper. Bring to boiling; reduce heat. Simmer, uncovered, for 10-15 minutes or until reduced to 1 1/2 cups. Strain, discarding solids.
