Apricot or Prune Whip

Ingredients

  • 1 1/2 cup sweetened apricot or prune pulp
  • 1 1/2 Tbsp. lemon juice
  • 1/8 tsp. salt
  • 1/3 cup sugar
  • 3 egg whites, stiffly beaten
  • Chopped nuts

Directions

  1. Mix pulp, lemon juice and salt together. Beat sugar into egg whites, fold in fruit mixture and serve garnished with chopped nuts.

  2. If desired, this mixture may be piled lightly into a buttered baking dish and baked at 275 degrees for 30 to 45 minutes.
