Ingredients
- 1 large red onion, thinly sliced
- 3 cups distilled white vinegar
- 1 tbsp. + 1 tsp kosher salt
- 1 tbsp. + 1 tsp sugar
- 2 bay leaves
- 1 tsp black peppercorns

Place onion in a medium glass bowl; set aside.

In a medium saucepan, bring vinegar, salt, sugar, bay leaves, and peppercorns to a boil over medium-high heat. Pour boiling vinegar mixture over onion. Let stand at room temp until cool, about 1 hour. Refrigerate in an airtight container for up to 5 days.
