Ingredients
- 3/4 cup red pepper jelly
- 2 tbsp. water
- 1 tbsp. stone-ground mustard
- Vegetable oil, for frying
- 1 1/2 self-rising flour
- 1/4 cup plain cornmeal
- 1/4 cup grated Parmesan
- 1 cup Creamed Corn
- 1 large egg
- 1/2 cup whole milk
Directions

In a small bowl, whisk together pepper jelly, 2 tbsp. water, and mustard.

Fill a small Dutch oven halfway full with oil, and heat over medium-high heat until a deep-fry thermometer reaches 350.

In a large bowl, whisk together flour, cornmeal, and cheese. In a medium bowl, whisk together 1 cup Creamed Corn, egg, and milk. Make a well in center of dry ingredients. Add milk mixture, stirring just until moistened.

Working in batches, drop batter by tablespoonfuls into hot oil. Fry, turning occasionally, until golden brown, about 3 minutes. Remove with a slotted spoon; let drain on paper towels. Serve with red pepper jelly mixture.
