Apricot Topping

Ingredients

  • cup dried apricots, cut in slivers
  • 1/4 cup honey
  • 1 cup apricot preserves
  • Grated rind of 1 lemon
  • 1/3 cup chopped nuts
  • 2 Tbsp. brandy (optional)

Directions

  1. In small saucepan, combine first 2 ingredients with 1/2 cup water. Bring to boil and simmer, covered, 10 to 15 minutes.

  2. Add next 2 ingredients and heat, stirring. Fold in nuts, and add brandy, if desired.

  3. Pour cooled topping into jar with screw top. Heat before serving over ice cream, custard, rice pudding or steamed pudding.

  4. makes 2 cups
