Split Pea Soup

Serves 6 people

Ingredients

  • 2 cups dried split peas
  • 1 meaty beef bone or ham pieces
  • 10 cups cold water
  • 1/2 cup chopped onions
  • 2 cups finely diced carrots
  • 2 T oil
  • pepper
  • 1 T chopped parsley

Directions

  1. Place peas, meat, and water in 4 qt pot.

  2. Brint to boil over medium heat.

  3. Reduce heat to low and simmer covered.

  4. Sauté onions and carrots in oil. Stir into soup.

  5. Simmer covered 1 1/2 hours, until peas are very tender.

  6. Season with pepper during last hour.

  7. Remove meat bone and cut meat off.

  8. Garnish with parsley.
