Ingredients
- 2 cups dried split peas
- 1 meaty beef bone or ham pieces
- 10 cups cold water
- 1/2 cup chopped onions
- 2 cups finely diced carrots
- 2 T oil
- pepper
- 1 T chopped parsley
Directions

Place peas, meat, and water in 4 qt pot.

Brint to boil over medium heat.

Reduce heat to low and simmer covered.

Sauté onions and carrots in oil. Stir into soup.

Simmer covered 1 1/2 hours, until peas are very tender.

Season with pepper during last hour.

Remove meat bone and cut meat off.

Garnish with parsley.
