Arancini Di Ricotta (Stuffed Rice Croquettes)

Ingredients

  • 3/4 lb. rice
  • 1 lb. ricotta cheese
  • 2 eggs well beaten
  • 1 cup toasted bread crumbs
  • 1/2 cup olive or peanut oil
  • Salt to taste

Directions

  1. Cook rice in 3 quarts rapidly boiling salted water about 25 minutes or until done. Drain and cool.

  2. Spread 1 Tbsp. of rice on palm of hand; place 1 Tbsp. of ricotta over rice; sprinkle with salt; top with more rice; shape into round or oblong croquettes. Repeat this process until all rice and ricotta are used. Dip croquettes in well-beaten egg; roll in bread crumbs.

  3. Fry in very hot oil about 3 minutes or until golden brown on all sides.

  4. Serve hot as side with meat or fowl. May be served also s a dessert. Simply roll in powdered sugar and serve hot or cold.
