Ingredients
- 2 medium red potatoes, chopped
- 14.5 oz. can chicken broth
- 3 cups small broccoli florets
- 2 cups milk
- 3 tbsp. flour
- 2 cups smoked Gouda, shredded
- 2 cups torn winter greens (romaine, escarole or spinach)
- Smoked Gouda, shredded

In a large saucepan, combine potatoes and broth. Bring to boiling; reduce heat. Simmer, covered, for 8 minutes. Mash slightly. Add broccoli and milk; bring just to simmering.

In a medium bowl, toss flour with cheese; gradually add to soup, stirring cheese until melted. Season to taste with black pepper. Ladle soup into 4 bowls. Divide the greens evenly among the bowls. Sprinkle with additional smoke Gouda cheese.
