Ingredients
- 3 tbsp. mayo or salad dressing
- 1 tsp dried thyme, crushed
- 2 tbsp. yellow mustard
- 4 flour tortillas
- 12 oz. thinly sliced deli roast beef
- 12 oz. jar roasted red sweet peppers, drained
- 1/3 cup crumbled blue cheese
- 4 cups mixed salad greens
- Olive oil
- Additional crumbled blue cheese
Directions

In a small bowl, combine mayo and thyme; remove and set aside 1 tbsp. Stir mustard into the remaining mayo mixture.

Spread one side of each tortilla with mayo-mustard mixture. Evenly divide roast beef, roasted peppers, and the 1/3 cup blue cheese among tortillas. Roll up; brush with reserved mayo-thyme mixture.

In an extra-large skillet, cook tortilla wraps over medium heat about 2 minutes per side or until lightly browned. Cut each wrap in half. Divide greens among 4 plates. Drizzle greens with olive oil and sprinkle with additional blue cheese; top with halved wraps.
