Ingredients
- 8 slices dark rye bread
- 1/4 cup mayo
- 8 oz. thinly sliced deli roast beef
- 1 small cucumber, very thinly sliced
- 1/2 cup Greek yogurt
- 1/4 cup sliced green onions
- 1/2 tsp dried Italian seasoning
- Salt and black pepper
Directions

Toast bread. Place a slice of bread on each of 4 plates; spread with mayo. Top with beef and cucumber.

In a small bowl, combine yogurt, green onions and Italian seasoning; season to taste with salt and pepper. Spoon over cucumber. Top with remaining bread slices.
