Beef and Cucumber Stacks

Ingredients

  • 8 slices dark rye bread
  • 1/4 cup mayo
  • 8 oz. thinly sliced deli roast beef
  • 1 small cucumber, very thinly sliced
  • 1/2 cup Greek yogurt
  • 1/4 cup sliced green onions
  • 1/2 tsp dried Italian seasoning
  • Salt and black pepper

Directions

  1. Toast bread. Place a slice of bread on each of 4 plates; spread with mayo. Top with beef and cucumber.

  2. In a small bowl, combine yogurt, green onions and Italian seasoning; season to taste with salt and pepper. Spoon over cucumber. Top with remaining bread slices.
