Chicken Panini

Ingredients

  • 1/3 cup mayo
  • 2 garlic cloves, minced
  • 1 tsp dried Italian seasoning, crushed
  • 8 slices hearty multigrain bread
  • 8 oz. sliced or shredded cooked chicken breast
  • 1/2 cup bottled roasted red sweet peppers, drained and cut into strips
  • 1 cup fresh basil
  • 4 tsp olive oil

Directions

  1. Preheat a grill pan or skillet. To assemble sandwiches, in a small bowl combine mayo, garlic, and Italian seasoning. Spread 1 side of bread slice with the mayo mixture. Layer chicken, roasted sweet peppers, and basil leaves on half of the bread slices. Top with the remaining bread slices, spread sides down. Brush top and bottom of each sandwich lightly with oil.

  2. Place sandwiches on the grill; cover and cook about 6 minutes or until bread is toasted.
