Grilled Formaggio Sandwiches

Ingredients

  • 4 tsp butter or olive oil
  • 4 wedges Italian flatbread (focaccia), split in half horizontally
  • 8 slices Scamorza or provolone cheese
  • 12-16 fresh spinach leaves, washed and patted dry
  • 1/4 cup finely crumbled cooked bacon

Directions

  1. Spread 1 tsp of the butter on 1 side of each slice of bread. Place 2 slices cheese, 3-4 spinach leaves, and 1 tbsp. cooked bacon between the unbuttered sides of the bread.

  2. Place 1 sandwich in a large skillet or on a griddle. Cook over medium-high heat for 3-4 minutes on each side or until the cheese is melted and the bread is golden brown.

  3. Repeat with remaining sandwiches.
