Armenian Steak Tartare

Ingredients

  • 1 lb. top round steak, trimmed of fat and ground 3 times
  • 1 cup very fine bourghul (cracked wheat)
  • 1/2 cup cold water
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. paprika
  • 1/2 cup finely chopped green pepper
  • 1 cup finely chopped green onions
  • 1 cup finely chopped parsley

Directions

  1. Place meat in mixing bowl and add bourghul, water, salt, pepper, and paprika. Knead until very smooth, about 5 minutes.

  2. Add half the green pepper, green onions and parsley and knead well again, adding a few drops of water until you have a very smooth mixture. Shape the mixture into round, flat shape about one inch high.

  3. Put on a serving plate and sprinkle with the remaining green pepper, green onions and parsley. Cut into wedges and serve with French bread or Armenian pita bread.
