Ingredients
- 1 Tbsp. vegetable oil
- 2 lbs. boneless pork loin, cut into 1-inch cubes
- 1 Tbsp. annatto oil
- 2 Tbsp. finely chopped garlic
- 4 cups water
- 2 cups rice
- 1 1/2 cups fresh green peas
Directions

Heat oil in a large skillet and saute pork until lightly browned. Add annatto oil and gently stir pork. Add the garlic and saute for 2 minutes.

Add enough water to cover and simmer, covered over low heart until the pork is tender, about 1 1/2 hours.

Drain liquid from casserole and measure. Add enough water to make 4 cups. Return liquid to the skillet, stir in rice and peas. Bring to a boil. Reduce heart, cover, and simmer 20 minutes or until rice and peas are tender and all liquid is absorbed.
