Smoky Mushroom Stroganoff

Ingredients

  • 8.8 oz. package dried pappardelle
  • 1 tbsp. olive oil
  • 1 1/2 lbs. sliced mushrooms, such as cremini and/or shiitake
  • 2 garlic cloves, minced
  • 8 oz. sour cream
  • 2 tbsp. flour
  • 1 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1 cup vegetable broth
  • Snipped fresh parsley

Directions

  1. Cook pasta as directed; drain. Cover and keep warm.

  2. In an extra-large skillet, heat olive oil over medium-high heat. Add mushrooms and garlic; cook for 5-8 minutes or until mushrooms are tender, stirring occasionally. Remove mushrooms with a slotted spoon; cover to keep warm.

  3. For sauce, in a small bowl, combine sour cream, flour, paprika, and pepper. Stir in broth until smooth. Add to skillet. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Serve mushroom mixture and sauce over noodles. Sprinkle with parsley.
