Asian Chicken Salad with Peanut Butter Dressing

Ingredients
- Peanut Butter Dressing:
- 2 tsp. sunflower oil
- 2 tsp. toasted sesame oil
- 14 cup creamy peanut butter
- 1/4 cup rice vinegar
- juice of 1 lime
- 1 Tbsp. soy sauce
- 1 Tbsp. honey
- 1 clove garlic, minced
- 1 Tbsp. grated fresh ginger
- 1 tsp. chili powder
- Chinese Chicken Salad:
- 3/4 lb. grilled or baked boneless, skinless chicken breasts, sliced into long bite-size pieces
- 6 cups mixed salad greens
- 1/4 cup chopped fresh cilantro
- 1/4 cup thinly slice red onion
- 1/4 cup dry-roasted peanuts
Directions

In blender or food processor, puree the oils, peanut butter, vinegar lie juice, soy sauce, honey, garlic, ginger and chili powder.

In a serving bowl, combine the chicken, greens, cilantro, red onion and peanuts. Just before serving, drizzle with some of the dressing and gently toss to coat. Serve the remaining dressing on the side.
