Ingredients
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 1/2 tsp snipped fresh basil
- 1 tsp Dijon
- 1/4 tsp crushed red pepper
- 1 garlic clove, minced
- 15 oz. can black beans, rinsed and drained
- 15 oz. can butter beans, rinsed and drained
- 1 small cucumber, quartered lengthwise and sliced
- 8 oz. round fresh mozzarella, thinly sliced
- 2 red and/or yellow tomatoes, thinly sliced
- 1/2 cup thinly sliced green onions
- Fresh basil sprigs

For dressing, in a mason jar, combine vinegar, olive oil, snipped basil, Dijon, crushed red pepper, and garlic. Cover and shake well.

In a large bowl, combine beans, cucumber, and the dressing; toss to mix. Divide among 4 plates. Arrange cheese and tomato slices alternately on bean mixture. Sprinkle with green onions and garnish with basil sprigs.
