Ingredients
- 10 oz. loaf baguette-style French bread
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup coarsely chopped cucumber
- 1/4 of a red sweet pepper, seeded and cut into thin strips
- 1 oz. fresh mozzarella, cubed
- 2 tbsp. chopped green onion
- 2 tbsp. snipped fresh basil
- 1 tbsp. red wine vinegar
- 1 tsp olive oil
- 1/8 tsp black pepper
- 3/4 cup mixed spring greens

Cut baguette crosswise into 4 equal portions to create 4 mini baguettes. Cut a thin horizontal slice from the top of each portion. Using a knife, carefully remove bread from the centers of the mini baguettes. Set aside.

In a small bowl, combine tomatoes, cucumber, sweet pepper, mozzarella, green onion, basil, vinegar, oil and black pepper. Line bottoms of the baguette pieces with mixed spring greens. Fill baguette pieces with the tomato mixture. Replace tops. Wrap each sandwich in plastic wrap and chill for up to 2 hours before serving.
