Ingredients
- 4 red bell peppers
- 2 tbsp. olive oil
- 1 tbsp. red wine vinegar
- 1 small garlic clove, grated
- Salt and pepper
- Basil, torn
- Parsley, torn
Directions

Broil peppers on a baking sheet, turning, until charred. Transfer to a boil, cover and let cool. Peel, quarter and seed the peppers. Whisk olive oil with vinegar and garlic; season with salt and pepper. Drizzle over the peppers and top with basil and parsley.
