Roasted Red Peppers

Ingredients

  • 4 red bell peppers
  • 2 tbsp. olive oil
  • 1 tbsp. red wine vinegar
  • 1 small garlic clove, grated
  • Salt and pepper
  • Basil, torn
  • Parsley, torn

Directions

  1. Broil peppers on a baking sheet, turning, until charred. Transfer to a boil, cover and let cool. Peel, quarter and seed the peppers. Whisk olive oil with vinegar and garlic; season with salt and pepper. Drizzle over the peppers and top with basil and parsley.
