Fried Butternut Squash and Sage

Ingredients

  • 1 1/4 cups flour
  • 12 oz. can seltzer
  • 1 tsp kosher salt
  • 2 cups butternut squash, peeled and thinly sliced
  • 20 sage leaves
  • Vegetable oil, for frying
  • Lemon wedges, for serving

Directions

  1. Whisk flour with seltzer and kosher salt. Dredge squash and sage in flour, then dip in batter.

  2. Working in batches, fry in 1 1/2 inches 350 degree vegetable oil until crisp, about 6 minutes for the squash and 1-2 minutes for the sage. Drain on paper towels; season with salt. Serve with lemon wedges.
