Ingredients
- 1 1/4 cups flour
- 12 oz. can seltzer
- 1 tsp kosher salt
- 2 cups butternut squash, peeled and thinly sliced
- 20 sage leaves
- Vegetable oil, for frying
- Lemon wedges, for serving
Directions

Whisk flour with seltzer and kosher salt. Dredge squash and sage in flour, then dip in batter.

Working in batches, fry in 1 1/2 inches 350 degree vegetable oil until crisp, about 6 minutes for the squash and 1-2 minutes for the sage. Drain on paper towels; season with salt. Serve with lemon wedges.
