Stuffed Mushrooms

Ingredients

  • 24 white mushrooms
  • 8 oz. Italian sausage, bulk
  • Olive oil
  • 2 garlic cloves, chopped
  • 1/2 cup shredded mozzarella
  • 1/4 cup parsley, chopped
  • 1/4 cup grated Parmesan
  • 2 tbsp. olive oil

Directions

  1. Remove and finely chop the stems of the mushrooms. Brown and crumble Italian sausage in a skillet with olive oil. Add the mushrooms stems and garlic; cook until tender, 3-5 minutes. Cool.

  2. Stir in mozzarella, parsley, Parmesan and olive oil; stuff into the mushrooms caps. Bake in a 9×13-inch baking dish at 425 until the mushrooms are tender and the filling is crisp, 20 minutes.
