Ingredients
- 24 white mushrooms
- 8 oz. Italian sausage, bulk
- Olive oil
- 2 garlic cloves, chopped
- 1/2 cup shredded mozzarella
- 1/4 cup parsley, chopped
- 1/4 cup grated Parmesan
- 2 tbsp. olive oil
Directions

Remove and finely chop the stems of the mushrooms. Brown and crumble Italian sausage in a skillet with olive oil. Add the mushrooms stems and garlic; cook until tender, 3-5 minutes. Cool.

Stir in mozzarella, parsley, Parmesan and olive oil; stuff into the mushrooms caps. Bake in a 9×13-inch baking dish at 425 until the mushrooms are tender and the filling is crisp, 20 minutes.
