Ingredients
- 2 1/2 cups packed arugula
- 1/2 cup mayo
- 1 garlic clove
- zest and juice of 1/2 lemon
- 1/2 tsp kosher salt
- pinch of red pepper flakes
Directions

Puree arugula, mayo, garlic, lemon zest and juice, salt and red pepper flakes in a food processor until smooth. Serve with olive oil potato chips.
