Arugula Dip

Ingredients

  • 2 1/2 cups packed arugula
  • 1/2 cup mayo
  • 1 garlic clove
  • zest and juice of 1/2 lemon
  • 1/2 tsp kosher salt
  • pinch of red pepper flakes

Directions

  1. Puree arugula, mayo, garlic, lemon zest and juice, salt and red pepper flakes in a food processor until smooth. Serve with olive oil potato chips.
