Asian Pork Fried Rice

Ingredients
- 1 cup long-grain rice
- 3 Tbsp. canola oil
- 2 cloves garlic, minced
- 2 tsp. peeled minced gingerroot
- 1 lb. pork tenderloin, cut into chunks
- 8 green onions or scallions (white and 3 inches for green), finely chopped
- 2 Tbsp. soy sauce
Directions

Prepare rice according to package directions; set aside.

In wok or large skillet, heat oil over medium-high heat. Cook garlic and ginger 30 seconds.

Add pork, a few chunks at a time, stirring frequently until brown.

Add green onions, rice and soy sauce, mix well.
