Asian Pork Fried Rice

Ingredients

  • 1 cup long-grain rice
  • 3 Tbsp. canola oil
  • 2 cloves garlic, minced
  • 2 tsp. peeled minced gingerroot
  • 1 lb. pork tenderloin, cut into chunks
  • 8 green onions or scallions (white and 3 inches for green), finely chopped
  • 2 Tbsp. soy sauce

Directions

  1. Prepare rice according to package directions; set aside.

  2. In wok or large skillet, heat oil over medium-high heat. Cook garlic and ginger 30 seconds.

  3. Add pork, a few chunks at a time, stirring frequently until brown.

  4. Add green onions, rice and soy sauce, mix well.
