Asian Red Pepper-Cilantro Tilapia

Ingredients

  • 1/2 red bell pepper, finely chopped
  • 2 large green onions, sliced
  • 1/2 jalapeno chile, veins and seeds removed, minced
  • 1 Tbsp. Asian fish sauce
  • 1 tsp. grated fresh ginger
  • 4 (6 oz.) tilapia fillets
  • 1/2 tsp. salt-free garlic-pepper seasoning
  • 2 Tbsp. chopped cilantro

Directions

  1. Combine bell pepper, green onions, chile, fish sauce and ginger in medium bowl.

  2. Sprinkle tilapia with garlic-pepper seasoning. Spray large nonstick skillet with cooking spray; heat over medium heat until hot. Add tilapia; cook 4 minutes. Carefully turn; spoon bell pepper mixture over tilapia. Add 2 Tbsp. water; cover and cook 4 to 6 minutes or until tilapia just begins to flake; Sprinkle with cilantro.
