Asian Slaw with Ginger-Peanut Dressing

Ingredients

  • For the dressing:
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 1/4 cup rice vinegar
  • 2 tsp. soy sauce
  • 1 tsp. chili-flavored sesame oil
  • 1 Tbsp. peanut butter
  • 1 Tbsp. minced fresh ginger
  • 1 tsp. minced garlic
  • For the slaw:
  • 3 cups shredded green cabbage
  • 1 1/2 cups shredded red cabbage
  • 1 1/2 cups shredded carrots
  • 1 small red bell pepper, very thinly sliced
  • 2 green onions, white and green parts, thinly sliced
  • 1/4 cup fresh cilantro, roughly chopped
  • 1/2 cup chopped salted roasted peanuts

Directions

  1. In a medium bowl, whisk together the honey, vegetable oil, vinegar, soy sauce, sesame oil, peanut butter, ginger and garlic. Set aside.

  2. In a large bowl, toss together the cabbages, carrots, bell pepper, green onion and cilantro. Add the dressing and toss well to combine. Cover and refrigerate until well chilled. Sprinkle with peanuts just before serving.
