Chicken & Garlic with Fresh Herbs

Ingredients

  • 4 chicken breasts
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp. olive oil
  • 10 garlic cloves, peeled and halved
  • 2 tbsp. brandy or chicken stock
  • 1 cup chicken stock
  • 1 tsp minced fresh rosemary
  • 1/2 tsp minced fresh thyme
  • 1 tbsp. minced fresh chives

Directions

  1. Sprinkle chicken with salt and pepper. In a large skillet, heat oil over medium-high heat. Brown chicken on both sides. Remove from pan.

  2. Remove skillet from the heat; add the halved garlic cloves and brandy. Return to the heat; cook and stir over medium heat for 1-2 minutes or until the liquid is almost evaporated.

  3. Stir in stock, rosemary and thyme; return chicken to pan. Bring to a boil. Reduce heat; simmer, uncovered, for 6-8 minutes. Sprinkle with chives.
