Asparagus, Bacon and Cheese Strata

Ingredients
- 2 tsp. olive oil
- 4 slices turkey bacon, diced
- 1/2 cup diced onion
- 2 cups fresh or frozen cut (1-inch pieces) asparagus
- 6 slices whole-wheat bread
- 4 eggs
- 5 egg whites
- 3/4 cup skim milk
- 2 tsp. Dijon mustard
- 2 Tbsp. Dijon mustard
- 2 Tbsp. grated parmesan cheese, divided use
- 1 cup low-far cheddar cheese, shredded
- salt and pepper to taste

Heat olive oil in a large skillet. Cook bacon until golden brown. Add onion and asparagus, sautéing until vegetables are soft. Remove from pan and set aside.

Heat broiler.

Coat and oven-safe skillet with cooking spray. Arrange bread slices tightly in bottom of skillet.

Whisk together the eggs, egg whites, milk, mustard and salt and pepper. Pour over bread and allow mixture to soak in. Sprinkle with parmesan cheese.

Place a skillet over medium heat. Cook, shaking the pan frequently to promote even cooking, until almost cooked through. place skillet under broiler to set eggs, about 2 minutes. Remove skillet from broiler. Top eggs with bacon and vegetable mixture, cheddar cheese and remaining parmesan cheese. Place skillet under broiler again until cheese melts.

Variation: Cook the bread-egg mixture in a casserole dish in 375 degree oven for 15 to 20 minutes. Add cooked bacon-vegetable mixture and cheese on top and broil 2 to 3 minutes.
