Ingredients
- 3 Tbsp. olive oil, divided
- 1/2 lb. asparagus, trimmed and cut diagonally in 1/2 inch slices
- 1 onion, minced
- 1 clove garlic, minced
- 1/4 lb. mushrooms, sliced
- 1 lb. ground beef
- 1/2 tsp. oregano
- Salt and pepper to taste
- 4 eggs, slightly beaten
Directions

Heat 1 Tbsp. oil in skillet. Stir-fry asparagus until almost crisp-tender; remove and set aside. To drippings and remaining 2 Tbsp. oil; saute onion, garlic and mushrooms slowly until tender. Crumble in beef; cook just until meat loses red color. Stir in asparagus, oregano, salt and pepper. Reduce heat to low; pour in eggs. Stir gently until eggs are set. If desired, sprinkle with grated parmesan, if desired. Sprinkle with grated Parmesan cheese.
