Asparagus Joe

Serves 4 people

Ingredients

  • 3 Tbsp. olive oil, divided
  • 1/2 lb. asparagus, trimmed and cut diagonally in 1/2 inch slices
  • 1 onion, minced
  • 1 clove garlic, minced
  • 1/4 lb. mushrooms, sliced
  • 1 lb. ground beef
  • 1/2 tsp. oregano
  • Salt and pepper to taste
  • 4 eggs, slightly beaten

Directions

  1. Heat 1 Tbsp. oil in skillet. Stir-fry asparagus until almost crisp-tender; remove and set aside. To drippings and remaining 2 Tbsp. oil; saute onion, garlic and mushrooms slowly until tender. Crumble in beef; cook just until meat loses red color. Stir in asparagus, oregano, salt and pepper. Reduce heat to low; pour in eggs. Stir gently until eggs are set. If desired, sprinkle with grated parmesan, if desired. Sprinkle with grated Parmesan cheese.
