Polenta Bolognese Bowl with Spinach Salad

Ingredients

  • 12 thawed Herbed Turkey Meatballs (recipe), chopped
  • 28 oz. can fire-roasted crushed tomatoes
  • 1/2 tsp grated garlic
  • 3 tbsp. olive oil
  • 1 cup quick-cooking polenta
  • 3 oz. shaved Parmesan
  • 5 oz. baby spinach
  • 1 tbsp. fresh lemon juice

Directions

  1. In pot, cook meatballs, tomatoes, garlic and 1/4 cup water over medium, stirring, until heated through, 10 minutes; add 1 tbsp. olive oil.

  2. Prepare polenta as directed. Stir in 1 oz. cheese; season. In bowl, toss spinach with remaining 2 tbsp. olive oil and lemon juice. Divide polenta and Bolognese among bowls; top with remaining 2 oz. cheese. Serve salad on the side.
