Asparagus Noodles

Ingredients
- 3 Tbsp. butter or margarine, divided
- about 1 Tbsp. olive oil
- 1 medium clove garlic
- 1/4 lb. mushrooms, sliced
- 1 lb. asparagus, trimmed and cut diagonally in 1/2-inch slices
- 1/2 tsp. salt
- 1/2 cup grated Parmesan cheese
- 1 Tbsp. sherry
- 8 oz. spinach noodles, cooked and drained
Directions

In large skillet or wok heat 1 Tbsp. each butter and oil, then brown garlic; discard. Add mushrooms and stir-fry until tender. With slotted spoon, remove and set aside.

Add asparagus to pan, and stir-fry until just crisp-tender, 3 to 5 minutes, adding more oil if needed.

Add mushrooms, remaining 2 Tbsp. butter, the salt, cheese, sherry and noodles. Toss lightly to combine over medium heart just until hot.
