Ingredients
- 1 pkg. (8 oz.) frozen asparagus spears
- 2 eggs
- 1 cup cottage cheese
- 1/4 cup (1/2 stick) butter or margarine, melted
- 1/4 cup flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 cup dairy sour cream
- 1 tomato, peeled and thinly sliced
- 1/4 cup grated Parmesan cheese

Cook asparagus just until tender; drain. Arrange in spoke design on bottom of well-greased 9-inch pie pan. (If asparagus is more than 3 1/2 inches long, allow tips to extend up sides of pan.)

Beat eggs until frothy in a medium-size bowl. Add cottage cheese and butter; beat until almost smooth. Mix in flour, baking powder and salt. Sir in sour cream.

Pour filling into asparagus-lined pan. Arrange tomato slices on top. Sprinkle with cheese.

Bake in a medium oven (350 degrees) for 30 minutes, or until firm in center, Let stand in pan 10 minutes. Cut into wedges; serve warm.
