Asparagus Scalloped Potatoes

Ingredients

  • 6 medium potatoes, pared and thinly sliced
  • 1 tsp. minced onion
  • 2 cup milk
  • 2 Tbsp. flour
  • 3 Tbsp. butter or margarine
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 3 hard-boiled eggs, chopped
  • 1/2 tsp. lemon juice
  • 1/2 cup American cheese, grated
  • 1 can cream of asparagus soup

Directions

  1. Place sliced potatoes in 2-quart casserole. Add onion, chopped eggs, salt and pepper. Set aside.

  2. In saucepan, cook flour, butter, and milk until thickened. Cook over low heat stirring constantly. Add lemon juice, American cheese and cream of asparagus soup. Mix together; pour over potatoes. Bake at 350 degrees for 1 hour.
