Asparagus and Shrimp Fajitas

Ingredients

  • 1 lb. green asparagus
  • 1 red bell pepper, chopped
  • 1/2 red onion, chopped
  • 1 lime, cut into slices
  • 2 tsp. lime juice
  • 1 tsp. of chili powder
  • 1 lb. cooked shrimp
  • 1 1/2 Tbsp. olive oil
  • 4 flour tortillad

Directions

  1. In a bowl, add shrimp, chili powder and lime juice.

  2. In a large skillet, heat the olive oil. Add onion, red pepper and asparagus. Cook for 4 minutes.

  3. Add the ingredients from the bowl to the skillet. Cook for an additional 2 minutes.

  4. Add mixture to tortillas and garnish with lime slices.
